Tofu Tacos

Our customers have been requesting this recipe for awhile, and now we know why! The addition of refried beans creates a pleasing texture. Even meat-eaters will love these tofu tacos.

Ingredients

  12.3 oz silken firm tofu 1 package

  1.25 oz ORTEGA® Taco Seasoning Mix (1 package)

  16 oz ORTEGA® Refried Beans (1 can)

  12 ORTEGA® Taco Shells 1 package

  Toppings: SARGENTO® Fancy Shredded Colby-Jack Cheese, sliced green onions, chopped fresh cilantro and ORTEGA® Thick & Smooth Taco Sauce

Directions

PLACE tofu and seasoning mix in food processor; process until smooth. Transfer to a medium, microwave-safe bowl. Fold in beans. Microwave on MEDIUM (50%) power, stirring halfway through, for 2 to 3 minutes.

FILL taco shells with tofu mixture. Top with cheese, green onions, cilantro and taco sauce.
